研究方向:
结合食品科学、生物技术、生物化学和食品胶体等学科领域的理论与技术,开展蛋白质功能性优化、蛋白质新材料开发、生物活性成分包埋与运载、大分子在复杂食品体系中的相互作用等研究工作,在生物技术及化学方法改善蛋白功能性、蛋白质凝胶微粒制备与应用等方面取得了一定成果。
